Delicious sweetcorn soup!

Perfect lunch for the current lockdown! Super delicious, nutritious and comforting, and the main ingredient is a tin of sweetcorn from the back of the cupboard! (or a frozen bag from the freezer!)

Serves 3/4

What you need:

large tin of sweetcorn

1 onion

1 small potato to thicken it

1 stock cube

1 bay leaf

dash of milk at the end to add a little creaminess

seasoning

What you do: 

Into a pan add: sweetcorn, chopped onion, peeled / chopped potato, bay leaf and. 2 pints of boiling water. Heat through until potato and onion are soft. Blend then add milk and seasoning to taste!
