I love sweet potatoes. They taste delicious and they really good for you, being high in vitamin A, vitamin C, manganese, copper, pantothenic acid and vitamin B6. They are also a good source of potassium, fibre, niacin, vitamin B1, vitamin B2 and phosphorus. What's more they are really easy to prepare and cook! Much easier to peel than their cousin the potato, and also tend to cook more quickly are easier to mash or blend too! I make this mash for the family around 3 times a week!
What you need:
- A couple of sweet potatoes, peeled
- A knob of butter
What you do:
Peel and dice the sweet potato and add to a pan of cold water and cook until soft. Drain and then blend or mash with a knob of butter and season well!
They seem to go with anything too! Enjoy x
