Rice noodles with mango, lime, sesame & coriander

I absolutely love this! It's my own recipe, adapted over the years from a few more complicated ones. It's so easy to make, so fresh, and can be served on it's own, with prawns, chicken or cannellini beans! I make a large batch and keep it in the fridge and eat it over a few days! Perfect of an informal lunch or at a bbq with chicken!

What you need: 

Pack of rice noodles (you can buy them already cooked, or I buy the dry ones that just need soaking for 10 mins)

Chopped mango chunks

Pack of fresh peas (optional)

Pack of pomegranate seeds

Bunch of coriander, chopped

Bunch of basil, chopped

1 tsp of chilli flakes or a red chilli, chopped

3 spring onions, chopped

 

For the dressing:

Squeezy lime juice (1 large tablespoon) or juice of one lime plus some grated zest for an extra kick!

Japanese rice vinegar - 120ml

Toasted sesame oil (love this stuff!) - 1 large tablespoon

Garlic oil - 1 large tablespoon

Olive oil - 1 large tablespoon

1 dessert spoon of honey

salt and pepper to taste, I like alot of both!

 

What you do: 

Cooked the rice noodles according to packet instructions then run under cold water to cool. Add the mango chunks, peas, pomegranate, spring onions, basil and coriander and chilli.

To make the dressing: just mix all of the ingredients together and pour over the noodles and mango etc and season to taste, and that's it! Enjoy x
